Cucumber and Asparagus Slaw


1 European Cucumber

1 Red Bell Pepper

1 Green Pepper

½ Red Onion

10 Stalks of Asparagus (pencil thin)

1 Bulb of Fennel

Lemon Zest from 2 lemons

1 tablespoon of Cilantro (roughly chopped)

½ cup of Apple Cider Vinaigrette

1 tablespoon of Granulated Sugar

A pinch of Cinnamon

A pinch of Kosher Salt


  • Peel, trim, seed all vegetables. Finely julienne and place in a mixing bowl.
  • Add vinaigrette, sugar, cinnamon, salt, and chopped cilantro. Let marinate in refrigeration for no less than 2 hours.
  • Drain well before serving.
